I don't hear much Mexican/Spanish music, but a Spanish song I've always enjoyed is on Linda Ronstadt's Hasten Down The Wind album - Lo Siento Mi Vida. Beautiful song.

A band which should not be ignored is a Venezuelan one called Los Amigos Invisibles; they are often referred as Venezuela's Jamiroquai, a comparison which makes sense to me. But they don't cease from being pretty original
