I'm not sure I'd call it under-recorded, or at least not less so than many of Verdi's early operas. Gardelli recorded it twice in the studio (for Philips and Hungaraton) and there's another later live Muti that was officially issued by EMI (with Samuel Ramey and Cheryl Studer). There's are a few other live recordings too, featuring Ghiaurov, Christoff and, more recently, Ferrucio Furlanetto.

I have the Philips recording, on which Raimondi is again the Attila and Deutekom a somewhat pallid Odabella. It really needs a fuller, dramatic coloratura. I agree that Sutherland's Santo di patria is fantastic.
There's one with Mancini, Tajo and Guelfi too
 
Fascinating and fun to hear, although I still prefer Joan. Mancini has a very focused instrument but not the incredible soaring upper register that Joan had, and not the voluminous sound. It gets a bit strident on top. Too bad she retired early though.
I love Mancini's lower register and her phrasing as shown here (She sung excerpts from Trovatore, Sonnambula, Norma and Pirata here)
She's in the league with Maria Vitale and Anita Cerquetti, spinto and dramatics that got overshadowed by Callas and Tebaldi
Mancini had health problems and her top disintegrated because of that, she stopped singing at early 60s
Vitale didn't find success and decided to retire in late 50s
Cerquetti had mental burnout and decided to stop before ending like Bruna Rasa
All of their careers were over before they were 40, that's too bad indeed...
